Here's a healthy one for dinner tonight!

An exerpt from the MB Peeps Cookbook:

Grilled Tuna with Mango Cilantro Salsa

Ingredients:
2-4 tuna steaks
Sea or kosher salt
Freshly ground pepper
2 mangos, peeled and diced
1/4 cup red onion, chopped
2 Tablespoons cilantro, chopped
3 Tablespoons lime juice
3 Tablespoons orange juice

Directions:
For the salsa, combine the mangoes, onion, cilantro, lime juice and orange juice in a bowl and mix gently. Season with salt and pepper, to taste. Set aside in the fridge.

Season the tuna steaks on both sides with salt and pepper. Grill the tuna, turning once until desired rareness is reached (2 to 5 minutes per side). Serve topped with the salsa.

TGIF! I know you're thirsty! Here's a great summer time drink for you to make this weekend!

Lemonade Mojito's

Pre-prepare 1 cup of sugar syrup:

Over low heat combine 1 cup of water and 1 cup of sugar stirring until dissolved. Increase heat to medium; simmer 2 minutes. Let cool; chill before using.

In a large bowl muddle ½ cup of mint leaves with sugar syrup. Stir in 5 cups of club soda, 4 cups of vodka, 4 cups of fresh lemon juice and 2/3 cup of superfine sugar. Chill. Pour into ice filled pitcher with lemon rounds and mint sprigs; serve in tall glasses.

Already hungry for dessert?

Spice Cake with Caramel Frosting

Ingredients for Cake:
¼ lb butter (115 g)
1 cup sugar
½ cup dark brown sugar
4 eggs
½ cup milk
½ cup molasses
2 ¼ cups flour
1 teaspoon salt
½ teaspoon baking soda
2 teaspoon cinnamon
¼ teaspoon cloves
¼ teaspoon nutmeg
1/8 teaspoon cayenne pepper

Directions:
Preheat oven to 350°° F. Butter and lightly flour cake pans. Cream butter and slowly add the 2 sugars, beating until light and fluffy. Beat in the eggs, and then add milk and molasses, beating thoroughly.

Mix together dry ingredients and add to mixture, beating till well blended. Bake for about 30 minutes. Test with a toothpick. Cool for 5 minutes, and then turn onto wire rack to cool.

Caramel Frosting:

Ingredients:
¼ lb butter (115 g)
½ cup dark brown sugar
¼ cup milk
2 cups confectioner's sugar

Directions:
Melt butter and brown sugar in heavy saucepan, stirring over moderate heat until sugar is dissolved. Add milk and blend. Remove from heat. When cool, beat in confectioner’s sugar until thick enough to spread. Makes enough to frost a 2 layer 8-inch round cake, or one large pan. If using one large pan, be sure to adjust the cooking time accordingly.

A dinner suggestion - an exerpt from the MB Peeps Cookbook

Mama’s No Peek Chicken

Ingredients
1 can (10 3/4 ounces) cream of mushroom soup
1 can (10 3/4 ounces) cream of celery soup
1/2 soup can water
1/2 soup can dry white wine
1 package long grain and wild rice mix with herb seasoning
8 pieces chicken
1 package dry onion soup

Directions:
Mix cream soups, water, and wine with the rice mix; pour into a 13x9x2-inch baking pan. Place chicken pieces on top and sprinkle dry soup mix over all. Cover with foil and bake for 2 hours at 350°. NO PEEKING UNTIL DONE!!!!
